As a fellow OS X user, try heightening your settings (weird, I know), and lower your resolution if you get FPS drops.
This will significantly decrease your crashes, although they will still happen a few times per day.
Gmod has been like this on OS X ever since it was ported, and Garry doesn't really seem to know nor care about it, so I wouldn't really expect a patch or update in the upcoming months anyway.
Side notes: CityRP is a pretty heavy gamemode, which is probably why you haven't experienced the same thing on most other simpler servers.
My personal theory as to why Gmod on OS X crashes so often is because of bad memory management.
I always seem to have a higher chance of crashing when I see the little flashing "something is crating script errors", so when that "buffer" becomes full, since it's a port and not a native OS X build, it simply doesn't know where to go and decides to crash.
Hope that I have at least been of some assistance, and keep me updated on how it went after you changed your settings!
