I also just realised I put shitty Corsair vengence in, so I changed it to be faster (3200 instead of 2400) which brought the new price to £2,302- also to be 4 8GB stick rather than two 16's to better performance

This looks insane! This is what I was looking for. I may ask some questions when I come to properly build it just to make sure I'm getting all the right bits. Thanks man.

As for intel, they're really lagging behind at the moment. AMD tend to provide better price/performance, and with 5000 series, better overall performance.

If you're not gonna be getting one for a while it's likely best to check again when you're about to buy it, as currently stock and pricing change a lot and something that's a good deal today may not be tomorrow.

Generally though (right now), you'd likely have to go for prebuilt and try keep these in mind:
  • AMD 5000 series CPU, at your budget at least Ryzen 5800x
  • RTX 3000 series GPU, at your budget at least RTX 3070
  • Try go for pure SSD storage, HDDs are quickly becoming obsolete and especially at your budget. Decent M.2 drives are best and should fit fine within your budget.
  • RAM on AMD matters at lot, make sure the speed of your RAM is at minimum 3200mhz. Quantity doesn't matter as much but 16GB of it should be what you get at minimum.
  • You need to decide on how much you care about aesthetics, if you don't care at all it's easy to save a bit but you can easily get a really nice looking build that also has great performance at your budget.
  • Power supply matters, higher numbers and rating doesn't always mean better. Generally try stick to reputable brands (e.g Corsair).

If you'd much rather just prefer a list of things you should get or just a link to a good prebuilt PC, I'm sure many of us will be more than happy to provide it closer to when you buy it. Just right now it's hard due to what I said earlier.
