I prefer 3 dots over thinking, talking or typing.
I think the 3 dots can also be used for different possibilities, for example if you have nothing to say, you can keep the chat open for a while, showing to the player you might be confused or have nothing to say.

Non-mic users actually "talk" while typing. It makes its own sense.
Too much of a small detail to give a damn about imo, but thinking would be aight.

I honestly think that Talking should, indeed, be replaced with "Thinking", but - in the meanwhile, maybe OOC chat should be recognizable when being typed, identifiable as "Typing", and for actions (/me,/it, etc.) - "Performing"
